banana coffee sponge cake

Christmas is approaching, are you as excited as I am? 
Banana sponge cake - with a hint of coffee, soft n spongy and delectable!

Baking has some magic, like Christmas has! The ingredients talk to you, and the outcome just spells-you-bound!


Recipe:

Ingredients:

2 eggs
1/2 banana
3/4 cup powdered sugar
2 tbsp oil
3/4 cup all purpose flour
2 tbsp milk
1/2 tsp coffee - brewed and filtered in 1/4 cup water ( you can increase coffee if you wish, I just wanted a hint of it)
2 tsp apple cider vinegar
4-5 drops Vanila essence
2 tsp chocolate chips

Method:

1. Beat the eggs and sugar together with an electric beater until fluffy(10-15 min).
2. Add oil and give it another whisk.
3. Add mashed banana and beat again at low speed.
4. Add Vanila essence, mix
4. Fold in the flour, dust chocolate chips in flour and fold in.
5. Add milk and apple cider vinegar, beat again once.
6. Add coffee and whisk
7. Bake at 180 degrees for 15 min in a pre-heated oven or until done ( toothpick should come out clean)
