Chef's special - Air-fried grilled fish
My fondest memories of my childhood and growing years have
been the holidays and time spent at my bua’s place, always wrapped and
enveloped with warmth, lots of love and loads of play and fun!
I had good fortune of staying with them during my
college days as well and one of the most wonderful memories have been of the yummy food
that was prepared every day! It was as much my bua’s cooking prowess as it was
my fufs! So, I am writing to share his recipe today!
He is one of the most wonderful people I know, happy go
lucky, kind hearted and a complete foodie! He loves to read, he has a treasure of
hundreds of books and I used to love sneaking (still do) into his library and finding some
good book and spend a pleasant evening reading!
Food is his first love and he loves to cook for himself and
others as much he likes to eat! Their (bua fufa’s) sweet nokjhonk on the dining
table has remained a constant through all these years – he vying for that extra
salt and red chilly and she hiding it away from his reach, being concerned about
his health! Yes, it has remained a constant and is so lovely to watch every
time I visit them.
During college, I remember fuf’s yummy evening sandwiches
that we would both prepare together; he would be the chef and I the helper! It
used to be fun and always so yummy…He can cook almost any North Indian dish, specialty
being yummy chutneys and delicious non-veg!
Nowadays, he is really into cooking yummy fish. So, I am
going to share his hi-tech recipe of grilled fish in an air-fryer. Everyone
loves it and it’s cooked with almost no oil...I never thought of this before,
but it suddenly struck me that “Fufs, you should write a cookbook of your
special recipes”! You rock :) :)
Here is the grilled
fish recipe:
Ingredients:
½ kg fish
1 tsp garlic paste*
¾ tsp ginger paste*
2 tsp hung curd*
½ tsp ajwain*
½ tsp kasuri methi*
½ tsp turmeric*
salt and chilly powder to taste*
1 lemon juice
Method:
1. Soak fish in lemon and salt water and wash well after 15
minutes. This will remove the smell from the fish.
2. Mix well all the starred ingredients together and
marinate the fish with this for 2 hours.
3. Now add oil to the marinated fish and cook in air fryer
for 10 minutes. Change sides and grill for another 10 minutes!
Your yummy grilled fish is ready!! Serve as a snack with
soup or drinks or munch just like it! tw
