Ladakh diaries - Wai wai
Ladakh! ... so pristine and breathtaking! Nature is at its best here, with mountains, snowfall, lakes, and sand dunes together.
Oh! Its beautiful..but you won't be able to breathe and talk much. It looks that God is saying "Hey! monkey mind - stop - just watch and listen! Be with me and with no one else!" :)
In the midst of all the beauty and breathlessness, you would yearn for hot, steaming and yummy food, coz your stomach would be rumbling with all that travel, trek and cold. But take my word, do eat in limits - its the place to meditate and a somewhat empty stomach helps otherwise it can rumble with motions ;)
If in the near future, you happen to be in Tsomoriri lake, Ladakh, do visit this small kiosk run by this woman with a baby on her back. The photograph reminded me of my own kitchen with my lil one clinging to my legs and I steadfastly sticking to my chakla belan!
This lady has a two year old baby, who needs to be attended to all the time. But she has customers waiting for hot tea, snacks, and food. So, she would put the kid on the sling on her back and both of them would be bent on the table preparing your special order...and be assured its served hot steaming and with taste galore! The lady has a smile on her face and the lil boy has a twinkle in his eye...its a lovely combination - your stomach is satisfied and your heart is warmed!
Do order hot steaming wai wai, what's better than hot steaming soupy noodles in the icy cold weather! It was their special recipe that tasted just heaven!
Here's the recipe, straight from Ladakh (from the mom and baby duo):
Soupy vegetable Wai wai
Ingredients:
1 packet wai wai
2 tsp oil
1/2 carrot (finely chopped)
1/2 onion (finely chopped)
1/2 tomato (elongated pieces)
1/2 capsicum (cut in cubes)
2 cloves garlic (finely chopped)
2 cups water
Salt to taste
Method:
1. Hear 1 tsp oil in the pan
2. Add garlic, onion and saute until golden brown
3. Add carrot, saute until tender
4. Add wai wai, 2 cups water and let it cook
5. In a separate pan, saute tomato and capsicum for 3-5 min. Ensure that the crispness if retained.
5. When around 1/2 cup water is left and wai wai is well cooked, turn off the burner, add tomato and capsicum, salt to taste and top it with wai wai condiment oil
Your hot steaming soupy vegetable wai wai from Ladakh is ready! Serve hot, enjoy!
