Tastiest ever Paneer tikka masala, Priyanka style!



Are you looking for some delectable snack recipe for your upcoming dinner? 
 I will share one with you today; this one is from my childhood friend Priyanka, who is an awesome cook!


But before that a lil about the boon and bane of blogging about food!


Well, blogging about food makes clicking the food a priority – yes, a priority over eating it! So, when I cook for the blog, how much ever, tasty and delectable the thing is looking, the family patiently waits at the sides to let the photo session end OR they make it end quicker by helping me click that perfect pic! And I do ceremonially hear – “Ho gaya, ab to khila do”.


I think, my food blog is teaching them all patience! 


However, Priyanka never gets to click her food because her hubby and little son gobble the delicacy up as soon as it reaches the table. So, every time we thought about doing a story about that special dish she cooked, we never had a picture! 


Priyanka is a software engineer and works full time with an MNC. For her, cooking is a way to de-stress; it gives expression to her creativity. 
Due to paucity of time, she leaves routine every day cooking to her cook but for the special days and dinners, she makes it a point to cook herself. She loves hosting friends and cooks and prepares everything on her own! And she regularly wears the chef hat to pamper her lovely family!


We were due to meet and catch up for a long time and I was invited to this superchef’s home (very tastefully designed and managed) – Well! It was a perfect opportunity for me to click that impending pic and I tasted the tastiest ever paneer tikka at Priyanka’s place.  I have never been a fan of paneer tikka that’s sold in the market…too spicy for my tongue and too heavy on my stomach; however, what Priyanka prepared was just sumptuous. It was melt in mouth, with subtle flavors of all ingredients of the marination, grilled to perfection, and beauty to look at! I have become a fan of paneer tikka after this and vouch for this recipe for any of your special dinners and hi-teas!

So, here is the recipe


Grilled paneer tikka – Priyanka style!



Ingredients:


For marination


·         1 cup hung curd

·         Besan dry roasted - 1 tbsp

·         Ginger garlic paste - 1 tsp

·         Kashmiri mirch - 1 tsp

·         Garam masala - 1/4 tsp

·         Kasuri methi, crushed – ¾ tsp

·         1 tsp cream

·         salt



Veggies:



·         Bell peppers

·         capsicum

·         onions

·         cauliflower

·         cottage cheese



Method:


1. Cut the veggies (capsicum, red yellow green bell peppers) in thick squares, cut onions into four pieces and cottage cheese into big cubes

2. Mix all the marinade ingredients and marinate the veggies into this for about 2 hours. You can even marinate overnight, it will enhance the flavors

3. When you need to serve, skew the veggies alternately and grill both sides on grill pan. Once it’s done, sprinkle some garam masala and lemon juice.

It’s a winter evening delight, do not miss it – very easy to prepare and totally yummy to eat!
