Mushroom spinach quiche!

My first introduction to Quiche came when we had an office pot luck and all of us at office had to prepare and bring a dish from home. Spinach pie was the dish our boss Dr. Apurva Goswamy had baked for all of us...Quiche is a variant of pie....It was a lovely spinach pie, baked to perfection, aromatic and very yummy! It was quite so inspiring! There are so many hats that he wears. He is a great leader who embraces his employees as his own people, a soulful musician (he plays beautiful flute and saxophone), so well read and a great human being. To top it all, he loves cooking! Would be an honor to share his recipe of spinach pie on YKS some day!

Well, it was after this pot luck that I got hooked to pies and quiches and would always explore them in bakeries... Recently, tried mushroom spinach quiche at home and the family loved it! They have been watching my craze with apple pie lately and seeing me baking another pie crust excited the lil one! Apple pie she cried excitedly, but this one is a variant I told her - it will have mushrooms... I so wanted her to try it but she was quite full by then!

Had it plated with cold pasta salad and some tandoori humus and ketchup...the combination went well together..Looking forward to baking more soon! It goes so well with the soups, the crust - as with my apple pie - has whole wheat aata in it...so good and nutritious.

Here is the recipe for you:

Mushroom spinach Quiche

Ingredients:

For crust:

1/2 cup whole wheat atta
1/2 cup maida
50 g butter
1/2 tsp salt

 Quiche filling:

4-5 Mushrooms (chopped tiny)
100 g Spinach (chopped)
2-3 cloves garlic (chopped)
Cheddar cheese/ parmesan cheese
1 egg
salt to taste
black pepper to taste
1 tsp cream
Butter


Method:

Step 1: Quiche crust dough: Take maida, whole wheat floor, salt and rub in 50 g butter well. Now add water and knead the quiche dough. Keep aside for half an hour. 


Step 2: For mushroom spinach filling: 
Saute garlic, chopped mushroom and spinach in a tsp of butter, add salt and pepper to taste
Beat and egg with cream and a pinch of salt
Mix the mushroom mix in the egg batter

Step 3: Quiche crust:
Roll the quiche dough to 1/8 inch thickness. Line it in the greased pie dish, poke holes on the base with a fork.
Bake in the pre-heated oven (180 degrees) for 6 min
Let it cool a lil after its baked.

Step 4: Mushroom spinach pie
Take the baked quiche crust, Add some grated cheese at the base
Add the mushroom spinach filling and top it again with cheese, be a lil liberal, its a lil serving!
Bake at  180 degrees for another 15 minutes or until the veggies and cheese are done and quiche looks puffed!

Even writing this is mouth watering, I so wish it was baking in my kitchen!  Do try and delight your kids!
