Fresh strawberry cake recipe

With such lovely strawberries all over, had been itching to bake a strawberry cake, and the kiddo had started demanding it too, so did one recently and it came out so soft, gooey and yummy. I tried my hand at the electric beater and it no doubt airs the batter so well  to ensure the sponginess. Its a must try, contains the goodness of fresh strawberries, seeds and dried berries! Also, is a treat to look at!

Documenting the recipe for myself and posterity :)

Ingredients:

1. 3/4 cup all purpose refined flour (maida)
2. 1/4 cup whole wheat flour
3. 1/4 cup oil
4. 1 tsp baking powder
5. 2 eggs
6. 3/4 cup sugar powdered (brown and white half half)
7. 4  chopped fresh strawberries
8. 1 tbsp seeds and dried berries mix
9. 1 tbsp Hung curd
10 2 tbsp icing sugar
11. 1 tbsp strawberry sauce (Hersheys)
12. Half lemon juice
13. Lemon rind (1/2 tsp)

Method:

 1. Beat eggs with an electric beater
2. Sieve sugar and add and beat further
3. Add oil and beat for another 2 min
4. Add lemon juice
5. Sieve the flours with baking powder, fold in and beat again for another 2 min
6. Coat fresh strawberries, seeds, lemon rind, and dried berries in a little flour and fold in the batter
7. The batter is ready, bake in a preheated oven for 20 min (or until done) at 180 degrees
8. Remove from oven as soon as it is done and let it cool.
9. Once cool, spread 1 tbsp strawberry sauce on top of the cake

For icing, beat hung curd with icing sugar and spread on top of the cake. Garnish with fresh sliced strawberries, seeds and died berries!
