Colourful Salad palette

 Winters is such beautiful time with plenty of fruits and veggies and it’s such fun both eating and cooking! We have lovely 🥕, radish, spinach, sarson (mustard), methi (fenugreek), Bathu, nice fresh, cabbage, lettuce and what not!

So much to choose from and so many possibilities in kitchen!

And if you are on a diet, winters are exciting times with so much to offer!

In line with YourKitchenStory’s resolution to healthy eating this year, I am making soups and salads everyday...I think it’s relevant to make full use of winter bounty and enjoy the wonderful produce!
So, today am going to share with you “YKS” special salad palette, it’s colourful, it’s nutritious and it’s downright delicious!

So, what do we need?

Ingredients:

Cabbage, chopped in squares (thoroughly washed in warm water)

Carrot (shredded)

Apples, peeled and chopped in squares

Cherry tomatoes (cut into 2)

Dates and prunes (chopped)

Peanuts (roasted)

Watermelon seeds (roasted)

Flax seed (roasted)

Few Mint leaves

Some Parsley

Dressing:

Lemon juice (1 lemon)

Honey (2 tsp)

Salt and pepper to taste

Method:

Toss in all ingredients together, add dressing!

Dig in ☺️ Don’t share or your palette will be empty in seconds!! Happy healthy eating!
